Vermicelli pulao or Sevai upma , or vermicelli noodles

  • vermicelli  is an easy breakfast / dinner /snack option. It doesn’t take more than 15 minutes to make this delicious and quick dish. To make it more healthy, nutritious and flavourful, add lots of vegetables to this like  carrots, capsicum  peas, grated cabbage,  sweet corn and green beans & any other vegetables of your choice.
  • Vermicelli resembles maggi. So you can replace maggi with this healthier option. 
  • Vermicelli are either made from whole wheat flour or all-purpose flour or rava (semolina) or rice flour or ragi flour. While making semiya upma, I prefer semiya made from whole wheat flour or rice flour or ragi flour as they are more healthy than the ones made from all-purpose flour.

INGREDIENTS

  • Whole wheat Vermicelli 1 cup
  • Carrot 1/2 inch cubes 1 medium
  • Cauliflower 5-6 florets
  • Grated cabbage ¼ cup
  • Green peas 1/4 cup
  • Green capsicum seeded chopped 1 medium
  • Steamed green beans ¼ cup
  • Salt to taste
  • Oil 2 tablespoons
  • Mustard seeds 1/2 teaspoon
  • Split urad dal) 2 teaspoons
  • Ginger chopped 1 inch
  • Garlic -4-5 pieces clove
  • Onion chopped 1 medium
  • Green chillies  optional
  • Turmeric powder 1/4 teaspoon
  • Lemon juice 2 tablespoons

METHOD

  • Boil and Steam ,veggies, carrot and cauliflower ,capsicum, Add French beans and peas and boil further for five minutes. Drain and cool. Keep it aside.
  • First, heat 2 tsp of oil in a pan , Add vermicelli and roast until just golden.Take care not to burn. take the roasted vermicelli out onto a plate and set it aside.
  • Heat remains oil , add mustard seeds and let it crackle. Then, urad dal and saute it for 30 seconds. Add garlic , ginger and saute it for a minute until just brown and aromatic. Now, add curry leaves and green chilies,  for another 30 seconds.
  • Add chopped onions,  fry until just soft and pink. Then, add all the boiled steamed veggies . Give it a stir and cook for 2 min ,Add turmeric powder and red chili powder , coriander powder and saute for few seconds.
  • Finally add roasted vermicelli to it and add 1 and half cup of water to it , mix salt as per taste . Cover it & Cook for five to six minutes. Remove from heat. Mix in lemon juice , coriander leaves and serve hot.
